Ingredients
Fish & Seasoning
2 (4–6 oz) Cod filets
- 1–1½ tbsp curry powder
- Kosher salt and black pepper, to taste
- Pinch of chili flakes
- ½ tbsp extra‑virgin olive oil
- 1 tbsp honey
Coconut Curry Sauce
- 1 tbsp salted butter
- ⅛ cup Thai red curry paste
- ½ tbsp fresh grated ginger
- ¾ cup chopped broccolini
- 1 cup full‑fat coconut milk
- 1 tbsp tamari or soy sauce
- ½ tbsp fish sauce
- ½ tbsp Scotch bonnet pepper, finely chopped
Garlic Brown Butter
- 2 tbsp salted butter
- 1½–2 cloves garlic, chopped
- Pinch of chili flakes
- cilantro for garnish

Instructions
1. Broil the Cod
Preheat the broiler.
Rub Cod with olive oil and curry powder.
Season with salt and pepper, drizzle with honey.
Broil 3–5 minutes until lightly caramelized.
2. Build the Coconut Curry Sauce
Melt butter with curry paste and ginger.
Cook 2–3 minutes until fragrant.
Add broccolini, coconut milk, tamari, fish sauce, and Scotch bonnet.
Slide broiled Cod into the sauce and simmer 3–5 minutes.
3. Make the Garlic Brown Butter
Melt butter with garlic and chili flakes.
Cook until butter browns and garlic turns crisp and golden.
4. Serve
Spoon curry sauce over warm Basmati rice.
Top with Cod and drizzle with garlic brown butter.
Finish with fresh cilantro.
